About the Role
The position involves maintaining the highest standards of sushi preparation, managing inventory, adhering to safety and sanitation protocols, and contributing ideas for new menu items while supporting team training and daily operations. • Assist members and guests with issues or concerns in a professional, courteous manner. • Prepare sushi items to the highest quality in presentation and taste; conduct regular spot checks for menu accuracy. • Maintain consistent sushi menu standards and ensure exceptional service. • Anticipate daily business levels and communicate inventory and preparation needs to minimize spoilage. • Complete daily cleaning schedules, temperature records, and opening/closing checklists. • Ensure spoiled or damaged serving utensils are removed from use and train staff to do the same. • Report non‑usable products to the Stewarding Supervisor for breakage tracking and keep equipment par levels updated. • Champion a clean and safe work environment by following safety, health, and food‑handling standards. • Research and propose new menu items to the Head Sushi Chef based on trends, local products, and member requests. • Assess ingredient quality and quantity, suggesting modifications or alternatives as needed. • Attend departmental meetings and training sessions as required. • Maintain thorough knowledge of occupational health and safety issues. • Work flexible hours, including evenings, weekends, and holidays; be prepared for long shifts. • Collaborate effectively in a team environment and stay calm during busy periods.

What You Bring
Candidates should possess a culinary degree or certificate, at least two years of high‑end sushi restaurant experience, and a thorough understanding of sushi techniques, health and safety, and kitchen operations. • Hold a culinary degree or certificate (preferred). • Have at least two years of experience in high‑end sushi restaurants. • Demonstrate extensive knowledge of sushi preparation techniques. • Possess comprehensive understanding of all cookery techniques and processes. • Exhibit a positive attitude, professional demeanor, and strong communication and interpersonal skills. • Communicate fluently in English; additional language skills are a plus. • Meet physical demands such as standing for over eight hours, lifting up to 50 lb, and working in varied weather conditions. • Adapt quickly to new projects in a fast‑paced setting.
