Assist sushi chef with prep, quality control, inventory, safety, and guest service.
Job Highlights
About the Role
• Assist members and guests with issues courteously. • Prepare items of the highest quality in presentation and taste; conduct regular spot checks for menu accuracy. • Maintain sushi menu standards for consistent service. • Forecast daily business and communicate inventory and preparation needs to reduce spoilage. • Complete daily cleaning schedules, temperature records, and opening/closing checklists. • Prevent use of damaged serving utensils, train staff, and report breakage to the Stewarding Supervisor to maintain equipment par levels. • Promote a clean, safe work environment by following safety, health, and food handling standards. • Propose new menu items to the Sushi Chef based on research, trends, and member requests to meet financial and quality goals. • Evaluate ingredient quality and quantity, suggesting modifications as needed. • Attend department meetings and trainings. • Work flexible hours, including evenings, weekends, and holidays; occasional long hours required. • Remain calm and focused during busy periods. • Meet physical demands such as standing, walking, and lifting up to 50 lb for extended periods.

What You Bring
• Hold a culinary degree or certificate (preferred). • Possess at least two years of high‑end sushi restaurant experience. • Demonstrate extensive sushi preparation knowledge. • Master all cookery techniques and processes. • Understand occupational health and safety issues thoroughly. • Exhibit a positive attitude, professional demeanor, and strong communication/interpersonal skills. • Be proficient in English; additional languages are a plus.
