About the Role

In this role the chef will design and manage daily sushi operations, control food and labor costs, maintain inventory, and ensure the highest quality in presentation and taste. They will also collaborate with senior chefs on ingredient selection, pricing, and waste reduction. Leadership duties include hiring, scheduling, training, coaching, and performance management of sushi cooks and assistants, as well as overseeing cleaning, safety, HACCP compliance, and equipment maintenance. • Design and execute daily sushi menus while controlling food, labor, and inventory costs. • Ensure highest quality and consistency in sushi presentation and taste through regular spot checks. • Develop new menu items using local and seasonal ingredients and market trends. • Hire, schedule, train, and mentor sushi kitchen staff; conduct performance evaluations. • Maintain strict food safety standards, HACCP compliance, and kitchen cleanliness. • Collaborate with senior chefs on ingredient selection, pricing, and waste reduction. • Resolve member or guest concerns professionally and promptly.

What You Bring

Candidates should hold a culinary degree or certificate, have at least five years of high‑end sushi experience (e.g., Nobu, Zuma), and possess strong leadership and menu development skills. Extensive knowledge of sushi techniques, local sourcing, and food safety is required. Additional expectations include a positive attitude, strong communication, flexibility to work evenings, weekends and holidays, physical stamina for long shifts and lifting up to 50 lb, and proficiency in English (additional languages a plus). • Hold a culinary degree or certificate and minimum five years in high‑end sushi restaurants. • Demonstrate extensive sushi preparation expertise and knowledge of local and imported products. • Exhibit strong leadership, communication, and flexible work availability, including evenings, weekends, and holidays.
