About the Role
Reporting to the Head Chef, the qualified Sous Chef will oversee daily kitchen operations, mentor junior staff, and ensure high standards of food safety and service delivery across routine meals, field rations, and mess functions. The role also involves supporting emergency and surge catering operations. • Lead kitchen section, ensuring food preparation and presentation meet service standards. • Supervise and mentor cooks and kitchen hands. • Maintain mise en place and produce timely, high‑quality food. • Enforce food hygiene and safety protocols. • Operate commercial kitchen equipment safely and competently. • Support emergency and surge catering operations. • Assist with inventory management and waste minimisation. • Conduct effective shift handovers and keep accurate food safety records. • Foster a respectful, inclusive, and collaborative kitchen culture.

What You Bring
In partnership with the Australian Defence Force, Ventia is seeking an experienced Sous Chef to join the team in the Albury Wodonga Military Area. This role supports Australia’s defence community by delivering high‑quality hospitality services on base. • Hold a Certificate III in Commercial Cookery (Australian recognised). • Minimum 3 years experience in a large commercial kitchen. • Demonstrate strong knife skills and solid food safety knowledge. • Exhibit excellent communication, time‑management, and organisational abilities. • Ability to lead and train junior kitchen staff. • Eligible for Defence Security Clearance (Australian citizen, willing to undergo AFP check). • Recognised Veteran Employer of Choice.
